Neapolitan chef Marcello Fotia was the winner of this years European Dual Pizza Championship held recently in Paris. Fotia, owner of the Divina Commedia pizzeria in Lavinio (near Anzio in Lazio), created the pizza Julienne for the competition. The pizza base, left to rise for three days, was decorated with a tasty compostion of fresh violets and primulas, obtained from Italys only grower specialized in commestibile flowers.
Fotia will now go on to enter the World Pizza Championship at Salsamaggiore in April. This time he is thinking of creating a pizza with a seaside theme, with the probably use of alghi.
